14 papers, 4 national TV shows, 4 local broadcasts publicize food handling study By
Jonas Manuel
Failure to wash food properly, or to wash hands, were among the major boo-boos cited in the USU study. / Photo by Jonas Manuel In the spring, Spectrum Consulting and clinical instructor in the USU Nutrition and Food Sciences' dietetics program, Janet Anderson, completed a study of 100 homes and their food preparation skills. The results showed that none was preparing food properly. Mistakes included failure to wash hands properly. The outcome of the study got national attention and has now already been covered by 14 newspapers throughout the United States and Canada, four Utah TV stations, and four national TV news shows, and will be covered by ABC's 20/20 with Diane Sawyer in the fall of 2000. Typically restaurants have been blamed for food poising, but this study, which was funded by the Food and Drug Administration, shows that there are many people at home who are at risk of food poisoning if food preparation skill aren't sharpened. With all the publicity that this study has gotten, millions of people are able to identify and learn what things they need to be aware of when preparing dinner.
