Cooking 101: Cheap and healthy
By Errin Stevenson
April 9, 2008 | As a college student, a newlywed,
or in a working family, it is hard to find a meal that
can be either frozen or reheated or serves a lot of
people and is also cheap. I understand because I fit
all three classes of people.
Therefore, I have collected and found recipes that
are lifesavers. One of my favorite places to collect
recipes from is www.allrecipes.com. The recipes found
on this website are rated and so you can always be sure
to cook up a good meal.
Soups are great and healthy meals, especially if they
are not cream based. Taco soup is my personal favorite
and one that I probably make all too often. It is light,
quick and easy to create different entrees with. You
can serve it as a soup with tortilla chips, cheese and
sour cream or you can serve it with salad. Husbands
and men always love the nachos so zest them up with
some of the soup too. The recipe is easy, cheap and
makes a lot!
Lotsa Taco Soup Recipe:
1 pd. Ground beef browned and drained
1 large onion, chopped
1 (16 ounce) can of chili beans, with liquid
1 (15 ounce) can of kidney beans, with liquid
1 (15 ounce) can of whole kernel corn, with liquid
1 (8 ounce) can of tomato sauce
1-2 c. water (depending on thick you want your soup)
2 (14.5) cans peeled and diced tomatoes
1 (1.25 ounce) package of taco seasoning
Directions:
In a medium skillet, brown ground beef and drain.
In a large saucepan, combine all the ingredients listed
above. Cook for two hours over medium heat, stirring
occasionally.
Or
You can also crock-pot this recipe. Put all the listed
ingredients in a crock-pot and simmer on low for eight
hours.
Serve and Enjoy!
